Miracle is a series of Christmas pop up bars that take over local bars with holiday decor and cocktails. This drink is a variation of the Mai Tai that also incorporates the Filipino purple yam ube into the drink as well as the acid adjusting technique in the pineapple juice.

Ingredients

  • 1 oz dark rum

  • 1/2 oz overproof rum

  • 1/2 oz aged rhum agricole

  • 1 oz acid adjusted pineapple juice

  • 1 oz ube coconut orgeat

Technique

Add all ingredients to a shaker tin with some pebble ice.

Shake for 10-15 seconds and pour into a rocks glass and add more pebble ice to fill.

Garnish

Rosemary & Powdered Sugar (snow)

Acid Adjusted Pineapple Juice

For 100 mL pineapple juice, add 3.2 grams of citric acid and 2 grams of malic acid and whisk to dissolve.

Ube Coconut Orgeat

Add 3/4 cup unsweetened coconut milk and 6 tbsp sugar and cook over medium heat until the sugar dissolves. Then add 1/2 tsp almond extract, 1/2 tsp coconut extract, 4 drops orange flower water, and ube extract at the ratio of 1 part extract to 10 parts liquid.
