A complex tiki sour from Smuggler's Cove

We started making a lot of tiki cocktails after we got the Smuggler's Cove book for Christmas. As we have explored the diverse styles in the world of rum, we have begun sourcing some of the more esoteric ingredients from the book to make more of the cocktails. One of those ingredients was li hing mui powder, a Chinese plum powder. At the recommendation of Martin and Rebecca Cate, we sourced our powder from the Hawaiian popsicle company OnoPops because their li hing mui does not contain any aspartame unlike many of the options available on Amazon. After making the li hing mui syrup with the powder, we have been trying other cocktails to use this little known ingredient. The Kingston Palaka is an excellent drink that just kept growing on us and used another ingredient that does not feature into as many cocktails as it should: Drambuie, the Scotch-based liqueur. Together with some Jamaican rum and lemon juice, these ingredients form a magnificent symphony of a sour cocktail.

Ingredients:

  • 1 1/2 oz Aged Jamaican Rum

  • 1 oz Drambuie

  • 1/2 oz Lemon Juice

  • 1/8 tsp Li Hing Mui Powder

Technique:

Add all the ingredients into a shaker tin and add ice.

Shake for 15 seconds and then strain into a chilled coupe glass.
