I found this gem from Matt Pietrek, author of the Cocktail Wonk blog and Minimalist Tiki book on Labor Day. I had purchased a bottle of Amaro di Angostura several weeks ago and was delighted to find another application for this Caribbean amaro with great baking spice notes of clove and allspice. Essentially, Amaro di Angostura is a lengthened version of the classic Angostura bitters.

Ingredients

  • 1 oz Angostura 7 Rum (or other aged column still rum)

  • 1 oz Amaro di Angostura

  • 1/2 oz orgeat syrup

  • 1/2 oz pineapple juice

  • 1/2 oz lime juice

Technique

Add all ingredients to a shaker tin with some crushed ice.

Whip shake for 8-10 seconds. Open pour into a tiki glass and top off with additional crushed ice.
