Barrel Aged Sazerac

Multiply by the size of your oak barrel (the recipe below is for 1L)…
28 oz Rye Whiskey
3 oz Herbsaint (or Absinthe)
3/4 oz Peychaud's Bitters
1 1/2 oz Simple Syrup
Whisk all ingredients together in a large container before funneling into an oak barrel. For best results, make a second "control" bottle to test the effects of the oak aging. Let your spirit age in the mini barrel for 4-6 weeks, tasting every week after third week until the appropriate taste is achieved. Then strain the barrel aged cocktail out of the barrel, bottle, and refrigerate.
For an individual cocktail, measure 2 1/2 oz of the barrel aged Sazerac into a stirring glass filled with ice. Stir 30-45 seconds. Strain into a chilled rocks glass (no ice). Garnish with an expressed lemon peel.
