Puka Puka Punch


Multiply by the size of crowd…
1 oz Lightly Aged White Rum
1 oz Moderately Aged Rum
3/4 oz Dark Blended Rum
3/4 oz Overproof Demerara Rum
1/2 oz Velvet Falernum
3/4 oz Passionfruit Syrup
1 oz Honey Syrup
3/4 oz Pineapple Syrup
3/4 oz Orange Juice
1 oz Lime Juice
1 dash Angostura Bitters
Add all ingredients to punch container and chill. Fill glass with ice and punch.

Moderately Aged Rum: Denizen 8Yr Merchant's Reserve, Plantation 5 Year, El Dorado 8Yr, Appleton Signature
Dark Blended Rum: Denizen Vatted Dark, Coruba Jamaican Dark, Myer's Dark, Hamilton 86
Overproof Demerara Rum: Planteray OFTD, Hamilton 151, Lemon Hart 151
Falernum: John D. Taylor Velvet Falernum (alcoholic), Tippleman's Double Spiced Falernum Syrup (nonalcoholic), B.G. Reynolds Falernum Syrup (nonalcoholic)
Missionary's Downfall


In a shaker tin with ice, add the following ingredients:
10 Mint Leaves
2 oz Lightly Aged White Rum
1/2 oz Peach Liqueur
3/4 oz Lime Juice
3/4 oz Pineapple Juice
1/2 oz Honey Syrup
Shake 10-15 seconds. Double strain into a rocks glass over crushed ice. Garnish with mint bouquet

Peach Liqueur: Giffard Creme de Peche, Combier Peach Liqueur
Demerara Dry Float


In a shaker tin, add the following ingredients and ice.
1 oz Demerara Rum
1/2 oz Lightly Aged White Rum
1/4 oz Luxardo Maraschino Liqueur
1 oz Lime Juice
3/4 oz Passionfruit Syrup
1/4 oz Demerara Syrup
Whip Shake 10-15 seconds. Party pour into a rocks glass and fill with crushed ice. Garnish with a small shot of overproof Demerara rum (which you can shoot or add to the cocktail to make it drier).

Lightly Aged White Rum: Denizen 5Yr White, El Dorado 3Yr, Plantation 3 Star White, Probitas White Rum
Pearl Diver


In a shaker tin, add the following ingredients and pebble ice.
1 1/2 oz Aged Column Still Rum
1/2 oz Demerara Rum
1/2 oz Lime Juice
1/2 oz Orange Juice
1/2 oz Gardenia Mix
1 dash Angostura Bitters
Flash blend 15-20 seconds. Party pour into a Pearl Diver or highball glass and fill with crushed ice. Garnish with pineapple fronds, orchid, or other tropical flourishes.
Gardenia Mix Recipe: Mix 1 oz honey, 1 oz melted unsalted butter, 1 teaspoon cinnamon syrup, 1/2 teaspoon allspice liqueur, and 1/2 teaspoon vanilla syrup. Store in fridge. Warm up when it solidifies.
